Comfort food




125g butter, chopped in small cubes

200g soft brown sugar

125g dark chocolate, chopped

3 whole eggs

50g plain flour

35g cocoa powder

1/4 teaspoon baking powder

150g chocolate chips


Preheat the oven to 180°C. Grease an 18 x 28 cm cake tin and line the base with non-stick grease-proof baking paper. Place butter, brown sugar and chocolate in a large saucepan and stir slowly over medium heat until well combined. Remove from the heat and beat in the eggs, by hand, using a wooden spoon. Sift the flour, cocoa and baking powder into the mixture and stir until well combined. Stir in the chocolate chips. Pour the mixture into the tin. Bake for 35 to 40 minutes (or until firm). You can also test if it is ready by taking a wooden skewer, inserting it into the centre and when it comes out dry or with a few small crumbs, then it is ready.

After it has completely cooled, you could glaze the brownies with an extra layer of dark chocolate frosting. On the other hand… you can also eat it by then! Your patience will be tested anyway with these warm chocolately smells through the whole house.
